Mexican Rice is a yet another side dish from Mexican Cuisine. These are made from white rice, garlic, onion, peppers and other ingredients.
This is a very simple recipe, here we have mentioned some ingredients but you can always add or subtract ingredients to suite your taste. So lets see what ingredients we will need
Ingredients:
1 1/2 cup white rice, uncooked
2 tbsp olive oil or vegetable oil
2 1/2 cup vegetable broth
1/4 onion, chopped
1/2 cup tomato, paste
3-4 cloves garlic, minced
1/2 green pepper, chopped
1/2 cup green peas
1/2 cup American corn
1-2 tsp chili powder
1 tsp cumin powder
1 lime juice
1/2 cup fresh cilantro
salt to taste
Directions:
Place the saucepan with oil in it, over medium heat. Now add garlic and onion , saute until softened. Add rice and cook with onion and garlic till it turns golden brown. Now tomato paste, all spices (no cilantro) , lime juice, vegetables and vegetable broth. Reduce the heat cover the saucepan and cook it for 15 min approx. Make sure that the broth is absorbed.
